The traditional production process involves hand milling the agave using axes and distilling the spirit in a clay and wood (viejo) Philippine still. The still is designed with clay pots in the bottom chamber and a wooden upper chamber. As the mezcal condenses, droplets pass through a bamboo conduit into a collector. This meticulous distillation process contributes to the unique and complex flavor profile of Burrito Fiestero Tepemete.
