Toro de Lidia tequilas pay homage to the Spanish bullfighting tradition and derive their name from the "fighting bull" or "bull of bullfighting" translation. These tequilas are crafted using 100% Blue Weber agave and are aged in uncharred American White oak barrels. To achieve a smoother flavor profile, the spirits are oxygenated and chill-filtered, whereby cooling the liquid to near freezing causes fatty acids to partially solidify and be removed via filtration.
The Toro de Lidia Extra Anejo tequila is aged for an extended period, between 3 to 8 years, in oak barrels, resulting in a rich, deep color and a flavor reminiscent of cognac or whiskey.
