Hillrock Estate Distillery, located in New York's Hudson Valley region, has a rich history dating back to 1806 and is known for producing top-notch beverages. Their Solera Aged whiskey, introduced in 2012, was the first of its kind and remains a remarkable example of their expertise. This continuously available whiskey is made from a carefully selected, undisclosed source of bourbon and undergoes the solera aging process. The final product is then finished in 20-year-old Oloroso Sherry casks, resulting in a barrel-strength whiskey with a proof of 92.6%. The aroma of this whiskey includes notes of dark fruits, rye, and delicate flower scents. Upon tasting, layers of sherry, cherries, sugared raisins, and vanilla blend harmoniously with caramelized rye spice.
