Siembra Metl's Don Mateo Cupreata is a mezcal made from 100% agave Cupreata. The region of Michoacan, where it's produced, is known for its volcanic belt, comprising active, dormant, and extinct volcanoes, various rivers, and diverse forests ranging from conifer to tropical. The Vieyra Vinata, where the agave is grown, is located on the side of a hill in the highlands above Morelia in the Rio Balsas area, enveloped by a temperate evergreen forest. The sandy soil and moderate rainfall in the high-altitude climate impart a unique taste to Don Mateo Joven Cupreata. Upon nosing, the pungent, smoky-sweet aroma of the agave mixes with herbaceous, wet earth notes. The silky texture on the palate warms up with flavors of roasted agaves and resinous pine bark, reminiscent of a summer afternoon in the vinata. The finish explodes with fresh cut agaves and meadows of Pino Bonito, stimulating different taste receptors in the mouth. The mezcal is aged in glass for six months before being hand-bottled.
